Minute Fudge Frosting

• Yields: 1 cake's worth

ingredients

• 2 cups sugar
• 1⁄4 cup light corn syrup
• 1⁄2 cup milk
• 1⁄2 cup shortening
• 6 tablespoons unsweetened cocoa
• 1⁄4 teaspoon salt
• 1 teaspoon vanilla

directions

1. Mix all ingredients except vanilla.
2. Stir over low heat until melted.
3. Bring to a full oil, stirring constantly for 1 minute.
4. Remove from heat and continue to stir until warm.
5. Add vanilla.
6. Continue to beat until a smooth spreading consistency is achieved.

This frosting has a delicious cooked fudge flavor; different than buttercream icing. My mom and older sisters made it a lot when I was growing up. I layer it thickly onto my cakes; I make a double batch.
