Mint Shortbread Cookies

"As tasty as they are pretty! Great for a St. Patrick's Day party. If I use flour straight from the freezer, I don't bother chilling the dough."

  • In a large bowl, cream together the butter and white sugar until light and fluffy.
  • Beat in the egg, then stir in the mint extract.
  • Combine the flour and salt; stir into the sugar mixture.
  • Add several of drops of food coloring until desired shade of green, mixing well.
  • Roll into a log, wrap in plastic wrap and refrigerate for 1 hour.
  • Preheat oven to 400°F
  • Slice into 1/4-inch slices and place on cookie sheets.
  • Bake for 9 minutes in the preheated oven, or until lightly golden at the edges.
  • Remove from cookie sheets to cool on wire racks.
  • Drizzle with melted white and/or dark chocolate if desired.

  1. Delicious and very pretty with the chocolate drizzled on top! I used peppermint extract and also added a bit of it to the chocolate. Next time I'll make a few more cookies, as these were certainly not on the small side. :-) Thank you Marg!
     
  2. I made these cookies today. Based on the reviews, I used 3 t (instead of 2 t) of mint extract and I also added 2 t of mint extract to the melted chocolate drizzle. These cookies did not have much flavor and the mint flavor was little to none. They are not particularly attractive although they look better if you add the chocolate drizzle. I won't be making these again.
     
  3. Good cookies and easy to make but will add more mint next time. Possibly drizzle with mint chips melted.
     
  4. These were excellent cookies.I drizzled them with melted chocolate but next time I think I'll put the chocolate on thicker. We really love the chocolate and mint combination. Thanks for a great cookie.
     
  5. Nice mint flavor and color. I added a little mint extract to the chocolate candy coating. Then spread the cookies with the chocolate and added a sprinkle of gold decoration. YUM!

Tweaks

  1. I made these last year for a St. Patrick's day party and they were a hit! I made them with mini chocolate chips in the dough for a wedding last summer. In another batch I replaced the mint with some lemon zest. Both were gobbled up. Thanks for a great recipe and helpful photo!
