Mimi's Sour Cream Pie

- 2 eggs
- 8 ounces softened cream cheese
- 1⁄2 cup sugar
- 1 teaspoon vanilla

For topping
- 1⁄2 pint sour cream
- 1⁄4 cup sugar
- 1 teaspoon vanilla
directions
- Beat eggs until smooth.
- Add softened cream cheese, sugar and 1 tsp.
- vanilla.
- Pour into graham cracker crust (graham crackers mixed with melted butter or store bought).
- Bake at 325 degrees for about 25 minutes or until it doesn't shake.
- Cool 5 minutes Combine the sour cream, sugar and 1 tsp.
- vanilla.
- Pour on top of cooled pie.
- Bake for another 5 minutes.
- Refrigerate for up to 4 hours.

Hey there............ I'm a Yankee (born and raised in Rhode Island), but live in the wonderful Southwest. A nurse by trade, but a chef by choice. I spend most my free time traveling in and around the New Mexico area. Love the mountains of Ruidoso and the culture of Santa Fe. I take care of my parents (Mom has Alzheimers and is extremely active at 81, Dad is a living breathing miracle of a man at 84. EVERY woman deserves one JUST like him, however, I do believe they broke the mold). I travel with them in their Airstream in an attempt to keep them as "normal" as possible. We are a musical family and enjoy dining and entertaining as much as possible. No kids from this shoot, although I raised an army. Have 16 kids (foster children as well as step-children).
