Midwestern German Fries With Sausage Gravy

For German Fries
- 2 medium potatoes, baked
- 1 tablespoon butter
- 1 small onion, chopped
- 1 small green pepper, chopped
- 4 eggs, beaten

For sausage gravy
- 1 lb bulk sausage, any flavor you prefer
- 2 cups milk
- 1⁄4 cup flour
directions
- Slice the potatoes into thin slices. Fry potatoes, onion and green pepper in butter in a large skillet.
- Once the potatoes are fried to your liking, add the beaten eggs. Stir mixture and cook until the eggs are done.
- While the potato mixture is cooking, brown the pound of sausage in another skillet breaking up the sausage into small chunks.
- Once the sausage is completely cooked, mix the milk and flour together until smooth and add to the sausage. Cook over medium-high heat until the sausage gravy thickens.
- Serve the sausage gravy over the German Fries.

All the comfort of home and really yummy. This is great for and easy and quick fix of those get comfortable and have dinner or breakfast that will warm you from the inside out. I lightened the comfort as much as I could with non-hydrogenated margarine, veggie sausage and skim milk. Still Yum. Made for Crafty Lady's bonus win in Photo Tag.

DH and DS insisted on 5 stars for this one. DH asked if I could make it again RIGHT NOW. That's high praise indeed. I loved the comfort food flavors in this and it went together really really fast! I only had 1/2 lb sausage and I doubled the recipe to serve two adults and a 19 year old eating machine. Left the skin on my potatoes and let them get nice and crispy brown before adding the eggs. It was a plateful and a wonderfully satisfying dinner. Made for ZWT IV.

<p>Update: I have changed my profile picture in honor of my dear best friend and loyal companion that I lost to cancer on 6/25/11. Maxx was the best dog that anyone could ever hope to have in their life. Until we meet again, sweet boy, you will be forever in my heart and memories. Nothing will ever replace Maxx, but she has helped to uplift Suki's spirit. I am a secretary for a county school board. I love to cook, bake, crochet, paint, sew, read and anything to do with crafts.
