Microwave Bread and Butter Pudding

- 1 egg
- 2 slices brioche bread, hallah, croissant, buttered
- 25 g caster sugar
- 150 ml milk
- 2 tablespoons cream or 2 tablespoons creme fraiche
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon mixed spice (I omitted this)
- 25 g dried fruit
directions
- Cut the bread into fingers and layer them in the bottom of a small dish. (About 600 ml capacity).
- Add dried fruit.
- Whisk together the egg, milk, cream, vanilla extract and cream.
- Pour over the bread and let it sit for about 1 hour. If you don't have an hour it does not matter too much.
- Micorwave on medium power for 4 - 5 minutes until it begins to set at the edges.
- Let it stand for 5 minutes and then serve with cream or custard and a big grin.

5 stars for an amazingly quick pudding recipe that can be made at the last minute, and with leftover brioche I had! I STILL prefer the baked version of bread and butter pudding, as I am a sucker for the little toasty bits on the edges, but this was really GREAT for a microwave version, and I am KEEPING this recipe for the future! I made this exactly as posted - there is a small error in the instructions, it does not say to add the sugar; I had already made and poured the custard over the brioche before I realised, so I sprinkled the sugar over the top instead - I used my own Recipe #219453, which has mixed spice in it! I think I may do that in the future as it made for a slightly crispy topping. We ate this after a simple soup lunch with a squirt of chantilly cream. Thanks Panda Rose. Made for PAC Autumn 2008.
