Mexican Tortilla Casserole

- 1 lb ground beef
- 1⁄2 cup diced onion
- 1 (1 1/4 ounce) package taco seasoning mix
- 2 cups cheddar cheese, shredded
- 1 (16 ounce) can refried beans
- 1 cup cooked rice
- 0.5 (12 ounce) can Mexican-style corn
- 4 large flour tortillas
- 8 ounces thick chunky salsa (your choice mild or hot)
directions
- Preheat oven at 350 degrees F.
- Spray a spring form cake pan or casserole dish with cooking spray.
- Brown ground beef and onion and then drain the grease.
- Add taco seasonings and cook according to package directions. Heat refried beans to make for easier spreading.
- Lay 1 tortilla in bottom of baking dish and spread 1/3 of the refried beans on it. Top with 1/3 of the meat and sprinkle on some cheese.
- Add the 2nd tortilla and spread 1/2 the rice, 1/2 salsa, 1/2 the corn and a little cheese.
- Add the 3rd tortilla and spread 1/3 beans ,1/3meat, and a little cheese.
- Add the 4th tortilla and layer the remaining beans ,meat, corn, rice, salsa and cheese.
- Bake, covered with foil, for about 40 minutes. Uncover and bake 10-15 minutes longer. Let sit 5 minutes before cutting.
- After baking, top with sour cream, diced white onion and shredded lettuce, if desired.

Oh, this is so good! I used white corn tortillas instead of flour, and regular sweet corn instead of mexi-corn, because I already had them on hand. This recipe is a keeper! Next time I will make sure to use flour tortillas, just because I like their texture better. Winner, winner, mexican dinner! :)

I hacked this recipe! I did use the springform pan - here's what I subbed in: - I reduced the flour tortillas to three, vs. four, based on the height of the spring form - I made spicy beluga lentils in place of ground beef and refried beans - I used a can of fire roasted corn and fire roasted tomatoes - threw them liquid and all in a pan and reduced them until the liquid was very little, in place of the Mexican corn - I made basmati rice with hatch chili peppers with chicken broth - I caramelized one sweet onion - I over cheesed with about 3 cups! I used pepper jack, cheddar, and provolone mixed - I used a hatch chili salsa 1st layer: Tortilla, lentils, fire corn/tomato, rice, cheese - 2nd layer: the same but with salsa on the rice - 3rd layer: fire corn/tomato, caramelized onion, salsa, cheese It was MONEY.
