Mexican Sheppards Pie

"A recipe I created when the family wanted sheppards pie but did not have potatoes. Now we eat this quite often. Its a family favorite."

  • Preheat oven to 350 degrees.
  • Cook rice according to package directions.
  • Saute diced onions and diced garlic in butter in a frying pan until translucent add ground turkey and brown.
  • Add cumin, chili pwder,1 can tomatoes & mild chilies including liquid and 1 cup water stir well and cook until water is absorbed.
  • Spray a 13x9 baking dish with cooking spray layer ground turkey on bottom of dish then layer with frozen corn.
  • Add 1 cup of shredded cheese on top of corn.
  • Then add cooked yellow rice on top of cheese.
  • Top rice with remainder of cheese.
  • Cook in oven for 30-45 min or until cheese turns golden brown on top. Enjoy.

  1. Delicious! Very creative recipe. DH grabbed a bite of the beef and tomatoes before I put it got put in the baking dish and now he wants it on everything. :) Followed the recipe as written, but next time will add a little more cheese. Thanks for the great dinner.
