- 1 lb ground turkey or 1 lb ground beef
- 1 (15 ounce) can diced tomatoes with mild green chilies
- 1 small onion, chopped
- 2 teaspoons cumin powder
- 3 tablespoons chili powder
- 2 garlic cloves, chopped
- 1 cup water
- 1 (10 ounce) package vigo yellow rice
- 1 (16 ounce) package frozen corn
- 2 cups shredded cheddar cheese
- 2 teaspoons butter

directions
- Preheat oven to 350 degrees.
- Cook rice according to package directions.
- Saute diced onions and diced garlic in butter in a frying pan until translucent add ground turkey and brown.
- Add cumin, chili pwder,1 can tomatoes & mild chilies including liquid and 1 cup water stir well and cook until water is absorbed.
- Spray a 13x9 baking dish with cooking spray layer ground turkey on bottom of dish then layer with frozen corn.
- Add 1 cup of shredded cheese on top of corn.
- Then add cooked yellow rice on top of cheese.
- Top rice with remainder of cheese.
- Cook in oven for 30-45 min or until cheese turns golden brown on top. Enjoy.
