Mexican Fried Corn

"Another recipe found in Taste of Home. I haven't tried it yet and am posting for ZWT5. The author of the recipe states: When I was growing up, my mother used to serve fried corn for breakfast with scrambled eggs and tortillas. Here in Arizona, corn is widely used in many dishes. This is a great way to use it— my husband and I both enjoy it."

ingredients

  • 3 cups fresh corn
  • 12 cup diced onion
  • 14 cup butter, cubed (or less to your liking, I use 1-2 tablespoons)
  • 4 ounces green chilies, chopped
  • salt and pepper

directions

  • In a skillet, cook corn and onion in butter until tender. Add chilies, salt and pepper; cook and stir over medium heat for about 5-7 minutes. Serve immediately.

  5. ack. forgot to review this yummy corn dish, i loved it. Have served it with almost everything you can think of except icecream, i go into corn frenzies lol.

I don't like to cook things that require going to specialized grocery stores. I subscribe to several cooking magazines, that usually, require everyday on-hand ingredients. <br /><br />I am not very fond of most seafood, but do enjoy lobster, grilled shrimp and chilean sea bass. I won't cook anything with rosemary or curry, as I really don't like either herbs' flavor.
