- 2 tablespoons canola oil
- 2 tablespoons butter
- 2 garlic cloves, minced
- 1 (16 ounce) bag trader joe's frozen fire roasted corn
- 1 (4 ounce) can chopped green chilies
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- cumin (optional)
directions
- Melt butter in canola oil on stove and sautee garlic until slightly brown.
- Add frozen corn, chilies, salt and pepper.
- Heat through.

I can't FULLY rate it because I didn't use fire roasted corn. Canned corn was on SERIOUS sale at the grocery store, and because I was making the dish for a charity dinner (as opposed to the President!), I kind of fudged. However!!! YUM!!!! I am going to have to go to Trader Joe's and do it "right" next time! Great flavor! A zippy way to serve corn!
