3 cups flour
2 cups sugar
1 cup oil
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons vanilla
3 eggs, beaten
3 cups chopped apples
1 cup chopped walnuts
¹⁄₂ cup raisins
¹⁄₂ cup chopped dates (optional)

directions

Preheat oven to 325.
Grease a 9x13 pan.
Mix flour, sugar, oil, soda, salt, vanilla and eggs.
Stir in apples, nuts, raisins and dates.
Spread in pan.
Bake 1 hour or until toothpick inserted in center comes out clean.

Great tasting cake. I was a little worried when I started to make this as the batter seemed overly thick and I don't bake very often. The results were a wonderful moist cake that was packed full of flavour and held together well. Will be making again soon. Many thanks for a great cake recipe.

Amazing cake. Easy to make and a great dessert to bring camping or to pack in lunches. I added 1/4 cup of apple juice to make it easier to spread in the pan.
