Maxine is a friend of mine who is an expert chef in her own right. She would deny it, but she is my go-to person for anything homemade and delicious. I figure that since she has been cooking for 80, yes, eighty years-that she can answer all of my silly cooking questions. She and her sisters started cooking when they were about 12 years old (you do the math).
