Mashed Potato Salad

ingredients
- 5 medium potatoes
- 1⁄2 cup sweet relish
- 1 tablespoon vinegar
- 2 tablespoons sugar
- 1 cup Miracle Whip
- 1 small onion, chopped
- 1⁄2 cup celery, chopped
- salt and pepper
- 5 hard-boiled eggs, chopped
directions
- Peel cut and cook potatoes as for mashed potatoes.
- When done drain well, mash.
- Add relish, chopped onion, celery, salt and pepper.
- In small bowl mix vinegar and sugar, mix until sugar is dissolved, add Miracle whip and mix well.
- Pour into mashed potatoes, mix throughly If the potatoes seem too dry add more Miracle whip.
- Fold in eggs.
- Refrigerate overnight.

For 45 years I've been hunting for a potato salad I enjoyed at a neighborhood po-boy storefront in New Orleans. THIS IS IT!!! I don't stock Miracle Whip so I used Best Foods mayo with a tiny shot of Lemon Juice. I also added a wee bit of very finely chopped bell pepper cause that's how I remembered it. This one's a 4 for the taste {my highest} Plus that special one for Suprise Me. Halfed it's still 4 HUGE servings. Thanks...

My husband and I really enjoyed this potato salad. It sorta tastes like Amish Potato Salad, and the Yellow Mustard Potato Salad we buy at Festival Foods (minus the yellow mustard). The 2nd time I made this salad, I did add a tablespoon of prepared yellow mustard, but that was a mistake, as it takes away the tang the vinegar adds to it. I will never do that again! Since my husband and I don't like Miracle Whip Salad Dressing, I used Aldi's brand of salad dressing, which we both prefer. While the potatoes were cooking, I drained off the liquid from the relish before adding it to the potato mixture. One thing I wanted to mention... if you were to add already chilled relish and hard boiled eggs, it helps to cool down the heated mashed potatoes, so you can eat this potato salad once your done preparing it. We like it served both ways... at room temp, or chilled and eaten the next day. Both ways it tastes quite delish! Also, I found from the time I started making this potato salad (that included boiling, peeling, and chopping the eggs), cooking the potatoes, and assembling the salad, it only took me 1 hour to prepare this salad. This potato salad was so easy to put together, and it didn't take all day to prepare it. I like that!! It's also now my favorite way to make potato salad. Thank you Jan for posting this recipe.
