Mary's Filled Sugar Cookies

"This is another tried and true recipe from Grandma. She always made her own jams and jellies and depending on what fruit was in season that was the fruit of choice for these cookies. Best - Apricot!!! 2nd Strawberry or Raspberry -- You make the choice, they are all good."

  • Cream shortening, sugar and beaten egg.
  • Mix in dry ingredients, then alternate mixing in with milk.
  • Chill dough overnight or as long as it takes to make the dough easy to handle.
  • Roll and cut into circles, one for the top and one for the bottom.
  • Place the bottom circle on the greased cookie sheet, add one+ teaspoon jam/jelly in the center. With a moistened finger, wet the outside edge of the bottom circle, place the top circle over the bottom and seal the edges by pressing down. (You can do this with a fork if you prefer, like the edge of a pie crust).
  • You can also put the jam on one side and flip the top over to make a half moon.
  • Bake @ 350 degrees for 12-15 minutes or until the bottom edge is starting to brown.

  1. I filled them with strawberry jam. They came out much bigger then I expected, but delicious! They were more like filling pastries then cookies, but all the better! Great recipe, thanks for posting.

  3. Awesome! Use'd raspberry and strawberry filling. (Personally liked raspberry better ;) Used circle and heart shapes. Good!

These reminded me of the date-filled cookies my mom used to make, & although I didn't use dates [will next time, though!], I did use two different fillings ~ half of the cookies got an apricot filling, while the other half got a healthy (?!?) dose of strawberry! AND, I filled them as full as I could! Here's another sweet item I want to include in my Finger Food Cookbook! Many thanks!
     
  5. Lovely recipe... I saw the words "apricot jam" and "cookie" ...combined in one recipe and was just pawing at the kitchen door to get these made LOL. Haste is not always good however, please DO leave the dough to sit as long as possible in the fridge, the first ones I rolled out after 1.5 hours were a bit hard to handle as the dough was a bit sticky, I shoved the rest back in the fridge and finished making dinner instead of continuing, an hour and a half later the rest of the dough handled like a dream. *DON'T be afraid* to whop in as BIG a teaspoon of jam filling as you dare, I didn't have enough faith in my ability to close these well enough so *thought* these might leak, but not one of them did and the best ones in the batch by far, are the ones with the most jam inside. The dough is a little drier than some cookies I have made before, but the jam does make up for that and everyone gave these the thumbs up. I let my 5 year old cut out the last tiny scraps of pastry into shapes and promised to include "her" star cookies in a photo as she was proud to "help" ... so it's fitting that her 4 little stars are exactly the right rating for this recipe :) Please see my rating system, 4 stars for a recipe where next time I will STUFF them FULL of jam, and leave the dough overnight as suggested. This is a family cookbook by the Hill Family. It all started with Charlie and Mary Hill. They had 7 children; Bruce, Francis, Howard, Charlie, Mignon, Joe and Sarah. Food and cooking was a big part of Charlie and Mary's lives and has been a big part of their childrens lives as well. Francis's Poem The Hill Clan even talks about it. The Hill Clan When we were growing up, there was plenty, Seven kids to feed, that was too many. Dad, I remember you always worked hard. And when it came to gambling, you were a card. Mom, you were always in the kitchen, Cooking, baking and making decisions. What to do with one pound of hamburger, to feed seven, And you always did, Oh thank heaven!!! Bruce and I were always elected to do the dishes, And we always did, with Dad's best wishes. Howard and Charlie were on the run, The rest of us prayed they would never get a gun. Mom, Mignon always hung in there by your knee, You couldn't even take time to pee. Then, there was Joe, we couldn't figure where he came from, The baker, the milkman, or some bum. Sarah Ann, we thought she was the best, She turned out to be the biggest mess. This little ditty was just for fun, For the rest of my life I will be on the run. <img src="http://www.recipezaar.com/members/home/165623/1grandmagrandpa88.jpg"> This picture was taken at Mary and Charlie's 50th Wedding Anniversary in 1988. Mary wrote this poem for that occasion and read it before the cake was cut. Fifty Year Anniversary Fifty years of marriage is something to behold, Especially if all your friends are one hundred percent all gold. And to come from a very large family that came many miles, To wish us both the best of luck, with a kiss, a hug, and a smile. We wonder how we can be so lucky to have all our children, grandchildren and great grandchildren here, We hold them all so very dear. It has been a wonderful anniversary, And I must confess that we love you all and thank you all, And close with just a heartfelt God Bless. <img src="http://www.recipezaar.com/members/home/165623/smallsibling.jpg"> These recipes are from not only from Mary and Charlie, but their 7 children, their spouses, their children and spouses. Thrown in are also recipes from Mary's sister and niece. The Hill clan produced lots of good cooks and even more good eaters. Mary also wrote this poem about her 50 years of marriage and boy was she right about more grandchildren and greatgrandchildren to come. 50 Years It has been 50 years since I was caught. Charlie chased me down and we tied the knot. With a family of seven, it took alot of living. But more then that, lots of forgiving. We had four boys and three girls, And I'm happy to say, they are still with us up to this day. Nineteen grandchildren and five great, I am sure there will be more, after this date. We done our part for posterity, I think that's the way it's supposed to be. There will always be room for more.
