Mario Lopez's Turkey and Black Bean Burritos

  • In 12-inch skillet, heat oil on medium until hot. Add turkey and cook 7 minutes or until browned, stirring occasionally and breaking up meat.
  • Add beans, pepper, onion, barbecue sauce, lime juice, chili powder, cumin, and salt; cook mixture 5-7 minutes or until turkey is cooked through.
  • To serve, place 1 tortilla on each of 4 serving plates. Divide turkey mixture evenly among tortillas; top with greens and cheese. Fold sides of tortillas over filling and roll tightly. Serve with hot sauce, if you like.

  1. We enjoyed this recipe. It's easy to make and flavorful. I used a 15 oz. can of black beans. We served it with sour cream and fresh salsa. My son liked the filling without tortillas. Will make again.
     
  2. I found this in Parade several years ago and it is my go to taco recipe. We add guacamole and sour cream but it still seems good for you and filling! It makes enough for 2 of us to eat for at least 2 days. Oh and try it on low carb tortillas.
     
  3. I'm made this recipe several times. My family and I love it! It's pretty rare when I make something this healthy and my son loves it but this is one of his favorites. So flavorful it doesn't seem healthy and sooo easy to prepare!
