- 2 cups kalamata olives (Pitted)
- 2 cups nicoise olives (Pitted)
- 2 cups green olives (Picholinegnda, Pitted)
- 1 cup extra virgin olive oil
- 1 cup yellow bell pepper (Medium Dice)
- 1 serrano pepper (Minced)
- 1⁄2 cup red onion (Sliced Thin)
- 1 cup marinated mushrooms (Button)
- 4 tablespoons garlic (minced)
- 4 tablespoons Italian parsley (Chopped)
- 2 tablespoons Greek oregano (Chopped)
- 1 tablespoon creole seasoning
- 2 tablespoons rosemary (Chopped)
- 2 tablespoons French thyme (Chopped)
- 1 teaspoon white pepper
- 1 dash fine sea salt
- 1⁄4 cup seasoned rice wine vinegar
directions
- In a large bowl combine olives, olive oil, peppers, onions, mushrooms, garlic and toss to coat.
- Add fresh Fresh parsley, Fresh Greek oregano, Creole seasoning, Fresh Rosemary, French Thyme, Fine Sea Salt, white pepper and Rice Wine Vinegar.
- Toss the mixture until well coated and cover with plastic.
- Stir the olive every hour for 3 hours.
- Serve Marinated Olives at room temperature. The olives should be chilled for 24 hours too bring out the flavor.
