Maple Sweet Potatoes

"Sweet potatoes are a nutritional powerhouse. Considering fiber content, complex carbohydrates, protein, vitamins A and C, iron, and calcium, the sweet potato ranked highest in nutritional value in comparison to any other vegetable. The nice thing about this lightly sweetened recipe is that it lets the flavor shine through without being masked with a bunch of other ingredients or any artificial ingredients. From the New England chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947."
