Maple Baked Bananas

- 4 bananas, sliced
- 2 tablespoons butter, melted
- 1 tablespoon real maple syrup
- 1 teaspoon lemon juice
- 1⁄2 cup flaked coconut
- 1⁄2 cup pecans, chopped
directions
- Place sliced bananas in a small casserole dish.
- Combine butter, syrup, and lemon juice and drizzle over bananas.
- Bake uncovered at 350°F for 10-12 minutes.
- Meanwhile, place coconut and pecans on a cookie sheet with sides and toast in oven till light brown.
- Sprinkle coconut and pecans over bananas.
- Serve in dessert dishes or over ice cream.

This was so wonderful-fast, easy & delicious! I made a really small portion to top some granola as a snack-and I just microwaved it to warm it up. But I loved the maple flavor and the sprinkle of coconut was great! I didn't use any pecans, though, but might use some granola next time. Thanks for sharing!!

Maple syrup is not as big in Australia as in America, but I wouldn’t dream of using anything other than “real” maple syrup if a recipe called for maple syrup. I shudder think what other kind there is. That aside, for me, this recipe has been another great find while on the Zaar Tour: such a simple dessert and SO delicious. The combination of flavours and textures was wonderful. And it’s a recipe I know I’ll come back to on those all too numerous occasions when a whole lot of bananas ripen suddenly overnight, which bananas are so inclined to do. And when they do that, I don’t always have the time, energy or inclination to make a banana cake! Fabulous recipe if you haven’t tried it! I thoroughly recommend it!

I usually love recipes that are completely from scratch (I still love them actually) but right now my focus is on having any kind of food ready by mealtime! It's a little crazy here lately. Every summer we have a huge organic garden, apple orchard and raspberry and blueberry patches, along with a woods full of wild foods waiting for me to learn what they are so I can collect them. I'm learning about wild mushrooms first, so if anyone has any tips, let me know. We also eat wild venison which my husband and I hunt ourselves. It's our favorite meat, since it's lean, organic and cheap! Some of my hobbies are: hiking, biking, rock climbing, gardening, playing in the water with my kids, or just swinging in the hammock with a good book. I go stir crazy if I spend too much time inside.
