Mandarin Chicken Tenders

"Mandarin orange flavored chicken. I found this recipe in Take Heart leaflet. This recipe is from Easy Healthy Cooking With 4 Ingredients. A serving is 1 cup. When I made this recipe I used mandarin oranges sweetened with Splenda and the Honey and Ginger."

  • Preheat a skillet sprayed with oil over medium heat. Season chicken tenders to taste with salt or salt substitute and freshly ground black pepper. Add tenders to the skillet and brown tenders lightly on both sides, checking for donesness.
  • Add orange juice and soy sauce to the skillet. Cover and simmer about 10 minutes. Add mandarin orange sections and simmer an additional 5 minutes.
  • Flavor perk: Add 2 tablespoons honey and 1/2 teaspoon ground ginger to soy sauce mixture.

  3. This was very easy and surprisingly good. I admit that when I mixed up the sauce, I was doubtful that my family would like it. However, I was proven wrong. Everyone loved it. I served it with fried rice (from a box) and an asian style mixed veggie. I might suggest a plain white or brown rice though. I did also use the "flavor perk" at the bottom of the recipe. Thank you so much for posting this.
