DIRECTIONS

  • Preheat oven to 375*.
  • Butter 2 9X9 baking pans (glass works great).
  • Break eggs into mixing bowl. Add milk, salt, pepper, and cayenne. Mix well.
  • Layer bacon bits, ham and vegetables in order listed in baking pans.
  • Sprinkle 1/4 Cup cheese over each.
  • Divide egg mixture evenly between both pans.
  • Bake at 375* 35 minutes, or until eggs are cooked.
  • Remove from oven and top with remaining cheese.
  • Slice each fritata into 6 pieces. Serve with green salad, fruit, and sauteed squash.
