1. This was really filling and tasted great! I probably need some work on my shaping skills as it didn't entirely look like a loaf, but nobody complained as they were too busy eating it! I loved the fact this was two of my favourite things combined into one dish - great cold the next day as well!
2. Being we don't like bell peppers I substituted celery for the green peppers. The meatloaf was tasty and moist. The next time I make it I might add some red pepper flake or green chili to kick it up a notch. This recipe is definitely a keeper. Thanks for sharing.
3. This was a hit with the family! I made this as listed, skipping the green pepper. I cooked the macaroni for about 4 minutes and it ended up pretty soft in the meatloaf. I would probably barely cook the mac next time. But it was great regardless! The flavours were spot-on and no one added any ketchup to it. Bonus! I will be asked to make this again and again! Made for Went To The Market tag game. Thanks smellyvegetarian! :)
4. Hi - great recipe. I made it 2 times. Once like above. The 2nd time, I used shells instead of the pasta shown above. They seemed to form together better with the meat. I added 2 diced jalapenos, to give some kick. I also substituted 2/3 cups of alfredo sauce instead of milk. Gave it a creamier/cheesier texture. Yum!
5. Very good!!! I also left out the green pepper. Will make again!

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!! To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck. Also...thanks a million to my Zaar fairy godperson :)!!!
