Macadamia-Crusted Tilapia With Pineapple Salsa

"I got this delicious recipe from the unlikeliest of places...Cosmopolitan magazine. I made some modifications to technique. A reviewer mentioned that it was missing something...I think adding salt and pepper to the batter is essential. I neglected to mention that in the recipe, but it's a must. You could also try toasting the nuts before using them."

  • For fish

  • 12 cup flour
  • 1 egg, lightly beaten
  • 1 cup crushed macadamia nuts
  • 4 tilapia fillets
  • For salsa

  • 1 cup fresh pineapple, finely chopped
  • 1 tablespoon red onion, minced
  • 12 jalapeno, minced
  • 14 cup cilantro, minced (1/4 c BEFORE mincing)

  • Preheat oven to 400 degrees. Dredge fish in flour, then egg, then nuts. Place on oiled baking sheet. Bake 20 minutes until golden brown.
  • Make the salsa as far ahead as possible to allow time for flavors to meld. Combine all salsa ingredients and refrigerate. Serve over fish.

  1. Very healthy and fresh tasting, but not much flavor. And I'm not a smoker or little old lady with no taste buds either. The pineapple was the best tasting part, but it was just lacking something.
     
  2. I really enjoyed this. The fish wasn't too heavy or oily. I actually made the Mango Salsa (http://www.recipezaar.com/macadamia-crusted-tilapia-with-pineapple-salsa-377060) over here, and not the salsa mentioned. I made it for a dinner party, and everyone cleaned their plate.
