Macadamia-Banana French Toast

- 2 bananas, sliced
- 4 eggs
- 1 (3 1/2 ounce) jar macadamia nuts, chopped well
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 dash cinnamon or 1 dash allspice
- 8 -10 slices whole wheat bread
- butter, for greasing baking sheets
- powdered sugar, for dusting
directions
- Preheat oven to 475 degrees.
- Butter well 2 large baking sheets.
- In blender or food processor add one banana, milk, half the chopped nuts, vanilla and cinnamon, blend until well mixed.
- Pour into large, shallow dish.
- Dip bread slices into mixture until well absorbed on both sides.
- Arrange on well-buttered baking sheets. Bake until golden. About 5 minutes.
- To serve, slice diagonally and dust with powdered sugar. Top with remaining sliced banana and chopped nuts.

What a nice treat for brekky. I made enough for one, it worked perfectly. Nice subtle flavors in this dish. The french toast was puffy and tender.
