- 1 1⁄2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 3 large eggs, at room temperature
- 1 cup sour cream
- 1⁄2 cup vegetable oil
- 2 teaspoons finely grated lemon zest
- 1⁄2 teaspoon vanilla extract

Lemon Glaze
- 1⁄3 cup sugar
- 1⁄3 cup fresh squeezed lemon juice

Lemon Icing
- 2 1⁄4 cups powdered sugar
- 3 tablespoons unsalted butter, melted and cooled slightly
- 3 tablespoons fresh lemon juice
- 1⁄2 teaspoon finely grated lemon zest
directions
- Preheat oven to 350 degrees.
- Spray a 9 x 5 inch metal loaf pan with nonstick baking spray with flour.
- In a large bowl, whisk together flour, sugar, baking powder and salt.
- Add eggs, sour cream, oil, lemon zest and vanilla to flour mixture.
- Using an electric mixer on med-low speed, heat for 1 minute, until blended.
- Scrape sides and bottom of bowl with a spatula.
- Beat on medium speed for 1 minute.
- Spread batter evenly in prepared pan.
- Bake for 50-55 minutes or until a pick inserted in the center comes out clean.
- Let cool in pan on a wire rack for 10 minutes.
- Meanwhile, make glaze: in a small saucepan, combine the sugar and lemon juice.
- Bring to a boil over med-high heat, stirring until sugar is dissolved; remove from heat; use immediately.
- Invert cake onto rack, then turn right side up.
- Poke warm cake all over with a skewer, then pour glaze over top.
- Let cool completely.
- Meanwhile, make icing: in a small bowl, whisk together powdered sugar, butter, lemon juice and lemon zest until blended and smooth; use immediately.
- Spread icing over top of cooled cake.
