Lunchbox Salad for One or Two

ingredients
- 1 carrot, diced
- 1 kohlrabi, diced
- 2 eggs
- 1 teaspoon dill weed, dried
- 1⁄2 teaspoon ground chili pepper
- 1⁄2 teaspoon fresh ground pepper
- 75 g plain yogurt (I use low-fat)
- 90 g feta, diced (I use low-fat)
directions
- Place carrots, kohlrabi and eggs in a small casserole, cover with water and bring to a boil. Let simmer for about 8 minutes or until veggies are done, but still firm. Drain.
- In a big bowl mix together kohlrabi, carrot, feta and spices. Add yoghurt and mix well.
- In a separate bowl mash eggs with a fork (of course youve peeled them beforehand). Add to the salad. Mix well.
- Enjoy.

Couldn't get kohlrabi so subbed cucumber and grated the carrot (to encourage the DM to eat though I put hers into a sandwich which she has enjoyed) and like others I did a raw mix and since I had 2 hard boiled eggs in the fridge it made it easy and quick to make. I ended up with about 3/4 of the mix and I was battling to get through it but the DM has asked if she can have what I left. Thank you Lalaloula, made for Went to Market.

This is terrific, and it might be for "Two" ~ but it was for "one" *ME* cause' I couldn't even save the other serving, well...cause' I devoured it! Following thru with French Tart, the taste of kohlrabi is outstanding! I followed this exactly, mixing the feta, yogurt, and the yellow (yolk) in the blender and made a nice dressing for the topping. Oh this is truly special, and very nice. I did add 1/4 teaspoon salt (course sea salt on top) to the whole thing, and was wonderful. Yum! Thanks for sharing! Wonderful Loula! I am big lover of kohlrabi, I used to eat it a lot when I lived in Germany and it is also popular in France too. I used some ready grated carrot and kohlrabi, as well as some grated celeriac. I decided to keep it raw as it was all grated and I like the texture of raw veggies.......I cooked the eggs of course!! I had some for lunch today with a simple cheese platter and crackers, and I have enough for tomorrow's lunch. Made for the Veggie Swap #16 and very much enjoyed, merci encore. FT:-)
