ingredients
- 1 tablespoon olive oil
- 1⁄2 cup onion, finely chopped
- 1⁄3 cup celery, finely chopped
- 1⁄3 cup carrot, finely chopped
- 2 lbs lean ground beef
- 1 cup rolled oats
- 1 egg
- 1 teaspoon garlic, minced
- 1 tablespoon Worcestershire sauce
- 1⁄2 cup milk
- 2 teaspoons Mrs. Dash seasoning mix
- 1⁄2 teaspoon ground pepper

Sauce
- 8 ounces no-salt-added tomato sauce
- 1⁄4 cup brown sugar
- 1 tablespoon yellow mustard
- 1 tablespoon cider vinegar
directions
- Saute onion, celery and carrot in olive oil until tender; cool slightly.
- In large bowl mix all meatloaf ingredients together with hands. Shape into loaf and place in baking pan.
- Combine sauce ingredients in small bowl; spread over meatloaf.
- Bake in preheated 350° oven for 1 hour.

I made this for dinner and I told my husband and teenage son, to season with a bit of salt if they desired after because this recipe was mostly for me. They didn't even do it! I was recently diagnosed with congestive heart failure and was told to follow a low sodium/heart healthy diet. Meatloaf is a huge favorite in our household and this one was right on the spot! The flavors and seasonings were perfect, we didn't even miss the sodium. Also, the sauce really surprised us because it was made with such simple ingredients and packed a ton of flavor!! Hands down, will be making this again. It was just delicious and hit my meatloaf craving spot. Thank you so much for such a simple, easy to follow, flavorful recipe. Highly recommend you try it.

This was really good! Loved the sauce! I left the carrots and celery out since I was out of both of them and added some freshly chopped oregano, and cumin (as I have always done) to the meat mixture. We enjoyed it and my mom and aunt loved it two days later! It was still moist when I reheated it! Will be using this as my go-to for meatloaf for now on!

I was born in Chicago, IL and have lived in the area all my life. I love to cook and plan meals and always have. As a child I would watch Julia Childs on TV every day (she came on right after Mr. Rogers) and I have been interested in cooking ever since. Now that I have a family I enjoy the quick and easy recipes just as much as the more intricate ones. I didn't mind putting in the extra time and effort when I only cooked recreationally. I still like to do that sometimes, but for the day-to-day chore of cooking (and sometimes it is a chore) I like the option of fast and simple.

I try to always review the recipes I try because I know how much I enjoy getting that feedback myself. Even when it is not necessarily positive because sometimes suggestions help me tweak things and make them better!
