Low Glycemic Oat Nut Bars for the Diabetic

My husband is a chow hound. Unfortunately, he is a Type 1 diabetic. I am always searching for recipes he can enjoy without causing a huge swing in his blood sugar levels. These little gems satisfy that snack attack, are rich in nutrients, fill him up, and do not spike his blood sugar.

ingredients
- 2 cups sunflower seeds (ground)
- 3⁄4 cup sesame seeds
- 2 cups rolled oats
- 1⁄2 cup pumpkin seeds
- 1⁄2 cup cocoa
- 3⁄4 cup almond butter (or other nut butter)
- 1⁄2 cup barley malt
- 2 teaspoons vital wheat gluten
- 2 teaspoons brewer's yeast
- 1⁄4 cup flax seed
- 1⁄2 cup dried cranberries (fruit sweetened if you can find)
- 1⁄2 cup slivered almonds
- 1⁄2 teaspoon salt
- 1 teaspoon cinnamon
- 1⁄4 cup Xylitol sweetener
- 2 tablespoons vanilla
- 1 1⁄2 cups agave nectar
directions
- Mix all the dry ingredients first, then add the Agave and vanilla. A very stiff dough will form. If it is too stiff add a bit more Agave. Form into balls or roll out onto a cookie sheet and cut into bars.
