- 1 cup unsweetened applesauce
- 1⁄3 cup brown sugar
- 1⁄4 cup molasses
- 1⁄8 cup canola oil
- 1 eggs or 4 tablespoons egg substitute
- 1 teaspoon vanilla or 1 teaspoon almond extract
- 1 1⁄2 cups rolled oats
- 1 cup flour (whole wheat or spelt)
- 1⁄2 cup all-bran cereal (crushed)
- 1 teaspoon cinnamon
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 5 dates (dried, pitted, chopped)
directions
- Mix all dry ingredients in a small bowl (oats, flour, cereal, cinnamon, powder, soda).
- Mix all wet ingredients in a large bowl (applesauce, sugar, molasses, oil, egg, vanilla).
- Add dry ingredients to wet ingredients.
- Stir in chopped dates.
- Pour mixture into a 9 x 13 pan (coated with non-stick spray).
- Bake at 350°F for 20 minutes.
