- 1 tablespoon baking powder
- 2 large eggs
- 1 1⁄4 cups buttermilk
- 1 teaspoon vanilla
directions
- Combine flour and baking powder and make a well in center.
- Beat eggs, buttermilk, and vanilla in a separate bowl.
- Add mixture to the well.
- Cook as usual.

The batter was very thick and I wound up making dollar-size pancakes as it was easier than trying to make larger ones. I would have added more buttermilk to make the batter thinner, but I didn't have any left to add. They puffed up nicely and turned a pretty golden brown. I served with Smart Balance and sugar-free syrup.
