  1. The batter was very thick and I wound up making dollar-size pancakes as it was easier than trying to make larger ones. I would have added more buttermilk to make the batter thinner, but I didn't have any left to add. They puffed up nicely and turned a pretty golden brown. I served with Smart Balance and sugar-free syrup.
