Low-Fat Black Beans

Adapted from the recipe on the back of a can of Bush's brand black beans. They're a great low-fat side dish for any Mexican fare. Very simple to prepare.

- 2 (15 ounce) cans black beans, drained and rinsed
- 1⁄2 cup onion, chopped
- 1 cup fat-free chicken broth
- 1 teaspoon ground thyme
- 1 teaspoon ground cumin
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
directions
- Combine all ingredients into a medium saucepan.
- Cover and simmer for 10 minutes or until beans are tender and begin to split.
- Serve immediately.

Very simple and savory. I like to go by a recipe so i know what flavors go well together (the few i've tried to invent end up disasters mostly). This was really good, and came together in minutes. Served this with quesadillas on the george forman. I will make this again. Keep posting your recipes Michael! You've got some keepers!Reply
