Low Carb Chicken Parmesan

"While on the South Beach diet, this dish satisfies my craving for the standard chicken parmesan dish.....but this recipe is missing the breadcrumbs. But it's so good you won't miss the breadcrumbs! In the world of low carb dieting, I like to serve this with a green veggie and/or tossed salad."

  1. Delicious! I cut my breast into smaller pieces so it would cook faster. Done in under 30 minutes. Thanks

  3. Sorry I have taken so long to review this recipe. I have been making this for some time now, when a quick recipe is a must this is family favorite. And I make it as directed, so this is a "real" review :) Thanks so much for posting! <br/>Rachel Castle

  4. I've made this recipe several times and my husband and I both really enjoy this recipe. Alot of flavor in this recipe without adding alot of fat and sugar. The only modification I have made to this recipe is that I apply the cheese at the beginning of the recipe rather than the last 5 minutes. Thank you for the tasty recipe. :)

  5. This was delicious and my very skeptical husband enjoyed it and said it is a keeper. I didn't use garlic salt or italian seasoning but rather used just oregano and basil with (homemade) roasted garlic.

Tweaks

  1. This is lovely, doesn't feel like a diet recipe at all! It just goes to show that you don't need all the extra fat and breading for a great taste! I subbed lowfat cheddar cheese for the mozzarella since that's what I had, and it worked really well. This is great for a week night meal since you can just toss it together and do something else while it's cooking. I served with with steamed spinach, very nice combo. Thanks for posting this.
