Louisiana Burger

- 2 lbs ground chuck, freshly ground
- 1 tablespoon Tabasco sauce
- 1⁄4 cup green onion, finely chopped
- 2 teaspoons kosher salt
- 2 teaspoons fresh ground black pepper
- vegetable oil, for brushing on the grill rack
- 6 good-quality hamburger buns, split
- 1⁄2 cup melted butter
directions
- Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
- For the patties, place the ground chuck in a large bowl and refrigerate for 1 hour prior to using. Add the pepper sauce, green onions, salt, and pepper. Handling the meat as little as possible to avoid compacting it, mix well. Quickly shape the beef mixture into 6 round, equally-sized patties.
- Cover with plastic wrap and set aside until ready to grill.
- Brush the grill rack with oil.
- Place the patties on the grill, cover, and cook, turning once, until done to preference, 5 to 7 minutes on each side for medium.
- Meanwhile, brush the melted butter on the top and bottom buns.
- Position the buns, cut side down, on the outer edges of the grill for the last 2 minutes of grilling to toast lightly.
- When the patties are cooked, remove from the grill and keep warm while resting.

I am a bit unsure how to rate this. I liked them. In fact, everyone in my family liked them, even the picky ones. My husband even was disappointed at the lack of leftovers. (My daughter ate two the day of, and I ate the leftover one not knowing he would want it.) The reason for my surprise is that they are spicy. Very spicy. I was getting complaints about the heat while people were eating, but they kept eating. So I guess that there was good flavor and not just heat. I should have expected the heat level from the ingredients and I do recommend these burgers if you are into that. I am still not sure if I will make them again, though.

Very tasty burger. Made with the Zydaco Sauce and Root Beer Glaze by the same chef. I cooked on a stovetop grill pan, but it still came out very well. I usually make my everyday hamburgers by sprinkling salt, pepper and onion powder on top. This recipe makes it much easier to prepare a batch for the whole family. Will make again. Made for the New Kids on the Block Tag Game.
