    dried Chinese mushrooms
  • warm water (to cover)
  • 1
    cup water
  • 1
    pinch sugar
  • 2
    turnips (peeled, shredded)
  • 1
    tablespoon canola oil
  • 3
    dried Chinese sausage (chopped)
  • 1
    cup dried shrimp
  • 1
    small shallot (sliced thin)
  • salt & fresh ground pepper (to taste)

    lb rice flour
  • 1
    tablespoon canola oil
  • 1
    garlic clove (minced)
  • 1
    Thai chile (seeded, minced)
  • 2
    tablespoons soy sauce
  • 1
    drop sesame oil
  • 1
    pinch sugar

DIRECTIONS

  • Soak mushrooms in warm water for 20 minutes. Drain. Rinse. Squeeze dry. Chop.
  • Bring the water and sugar to a boil.
  • Add turnips. Simmer 5 minutes. Set aside.
  • Heat oil in a skillet.
  • Add sausage, shrimp and shallots. Saute 5 minutes. Season.
  • Stir in mushrooms, turnips and flour. Mix well.
  • Pour into a sprayed 9 inch cake pan.
  • Steam 50 minutes.
  • Let cool. Cover. Chill 1 hour.
  • Bring back to room temperature. Slice.
  • Heat oil in a skillet. Fry slices until golden.
  • Combine the garlic, chili, soy sauce, sesame oil and sugar. Serve with slices.
