- 2 cups whole wheat macaroni, cooked and drained
- 1⁄4 cup butter
- 1⁄4 cup flour
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 teaspoon spicy brown mustard
- 2 cups skim milk
- 1 1⁄2 cups cheddar cheese, shredded
- 1 (14 ounce) can diced tomatoes, drained
- 7 ounces cooked lobster meat, finely chopped
- 1⁄4 cup gruyere cheese, grated
directions
- Melt the butter in a large sauce pan.
- Blend in the flour.
- Add salt, pepper, and mustard.
- Stir in the milk gradually; cook until thickened.
- Add the cheddar cheese; stir until melted.
- Add lobster and tomatoes.
- Add the macaroni, mixing well.
- Pour into a greased 2-qt baking dish.
- Top with gruyere cheese.
- Bake at 375 for 1/2 an hour.
