• 4 tablespoons all-purpose flour
• 1⁄4 teaspoon baking powder
• 2 1⁄2 tablespoons granulated sugar
• 4 tablespoons full fat coconut milk
• 1 teaspoon coconut extract
• 1 teaspoon lime zest

directions

1. Combine all ingredients. Stir until smooth.
2. Microwave on high for 1 minute. The top of the cake should be dry.
3. Cool slightly before consuming.
