Lime Chicken-Avocado Salad

"A light, refreshing recipe! It is adapted from a recipe found on one of those cards in the grocery store. Pairs quite well with cilantro lime rice. 1 hour of the prep time accounts for the time needed to marinate the chicken. Add more cayenne pepper if you like it spicy!"

  • Chop chicken breasts into chunks and place in a resealable plastic bag.
  • Whisk together lime juice, olive oil, honey, and cayenne pepper and pour half of the mixture over the chicken. Seal bag and marinate in refrigerator for 1 hour. Reserve remaining marinade for later use.
  • When chicken is ready, spray large saucepan with nonstick cooking spray and heat to medium. Place chicken in pan and discard bag with the marinade inside.
  • Cover and cook chicken until no longer pink, about 8-10 minutes, flipping chicken pieces occasionally.
  • Combine chicken, avocado, tomatoes, onion, and cilantro in a bowl. Pour reserved marinade over all and mix well.

    Loved this. I don't care for raw onions, so used Garlic Chives from my herb garden. I also added a dash of garlic powder. Didn't notice the garlic flavor, and next time would use a little more cayenne pepper. Served with Lime-Cilantro brown rice.

    Very light and flavorful! I marinated the chicken for about 2 hours and then cooked as directed. I did cook the onions with the chicken (don't like raw onions) and left out the cilantro (do NOT like) but it was still flavorful! I liked that the cayenne pepper didn't make it too spicy since I cannot handle the heat. Will be a good salad to make in the summer when it is too hot to eat anything heavy. Made for Everyday is a Holiday Feb 2010.

    A lovely summer salad! I made as directed but marinated both the chicken and the tomato/onion salad overnight, then cooked the chicken in the morning for lunch at the office. The avocado, onion, and tomato portion was spectacular - but I did feel like the chicken was missing a little something. Perhaps I didn't have quite enough lime juice, or split the marinade evenly and the chicken missed out, because it just tasted a little bland. But the marinade on the fresh tomatoes and onions with some chopped avocado was good enough to eat as a standalone! I will definitely try this recipe again and maybe add a little more cayeene or some red pepper flakes to the chicken to kick it up.

    Very good! I used chicken tender strips, marinated them for 4 hours and cooked them in the marinade. The cayenne gave it a good kick but it seemed to be missing one tiny little thing... I may add ginger next time or paprika, but salt is not needed at all. The lime flavor was fantastic and I didn't feel the need to add any greens to the salad. It was a very nice Summer dinner for my family and I will be making this again. Thanks for posting!

    Made this for DH's 'quick dinner' and put it over baby greens. He REALLY enjoyed it - he ate the whole portion, didn't share any :) Thanks Starrynews, for another great recipe for DH - he just LOVES avocadoes, so this was perfect. Made for Every Day's a Holiday, Dec 2008.
