  • Preheat oven to 350 degrees F.
  • Combine dry ingredients and walnuts, if using, in a mix bowl.
  • Add apples, egg white and oil.
  • Stir well.
  • This will be a very thick batter.
  • Spray square baking pan (8 x 8 inch or 9 x 9) with nonstick spray.
  • Pour batter into pan.
  • Bake for 30-35 minutes.

  1. This was a wonderful light tasting cake. Very moist, and flavorful. I had some warm from the oven, with a big glass of milk. Yum! I'll be making this again for sure!
     
  2. I thought this "cake" was wonderful and I'll definitely make it again. It's unbelievably moist and very flavourful. I like a lot of spices so added about a 1/2 teaspoon nutmeg and another 1/2 teaspoon cinnamon. I also added a heaping tablespoon of ground flax seeds. Im not sure I'd call this recipe apple cake. It was more like apple bars. I used a 9" square pan which holds about the same amount of batter as the 8 X 10 inch pan specified in the recipe, and the cake was only about a inch high when baked. I'm not sure if it should have risen any more than this. The next time I make the recipe I'll use an 8" square pan and see if this makes a difference. It's always a bonus when you find a recipe that is both delicious and good for you!

  4. Disappointing cake... This is just not a good cake, it is rather heavy, has no other taste than cinnamon - the apples get lost since they are grated. I had only read the first two reviews and I should have read the less favorable ones!
     
  5. I submitted a review but it doesn't appear so I am resubmitting it. This cake was a big disappointment. There is nothing "light" about it and it doesn't even look like a "cake" More like a big cookie. The picture shows a beautiful cake but what I got was only about an inch high. (and the BS was freshly purchased). Also the recipe didn't explain whether the egg white was slightly beaten or beaten until stiff. I am sure it makes a difference to the texture. I made the cake based on the fabulous reviews.
