  • Combine lentils, water, garlic, carrots, onion, tomato, cumin and salt.
  • Cook until thick and mushy.
  • For garnish, fry onions in olive oil until dark and crispy, stirring constantly to prevent burning.
  • Put soup in bowl; top with onion; and squeeze lemon on top.
  • Can put olive oil on top if you want.
  • Can serve with flatbread.

  1. I honestly expected this to be a bit bland, but the cumin, garlic and tomato really add a lot of flavor. But what takes it over the top in the onion topping - don't skip that. The lemon adds a nice perkiness. I did use veggie broth instead of water, I think that adds more flavor. I might add a little more garlic next time. Also, I reduced the lentils by 25%. This resulted in a thickish soup, and I think the full amount would have been more like a porridge. There is nothing wrong with that but I wanted a looser consistency.
     
  2. I thought this would taste too bland, too but it wasn't and I didn't change too much. The soup was cooked on LOW in a slow cooker for about six hours. I reduced the amount of lentils to 1 1/4 cups. That way the soup wasn't too thick or too thin (remember the soup will thicken up by the next day.) The onions, carrots, garlic and cumin were lightly sauteed in the olive oil a few minutes then transferred to the crock pot along with veggie broth for water, Muir Glen 'Fire Roasted' tomatoes and I reduced the salt to 1 teaspoon. Caramelized the onions with a pinch of sugar for about 25 mintues. Garnished the top of each serving with the onions, fresh cilantro with lemon wedges on the side. Served with a simple arugula salad with vinaigrette. Good soup! Reviewed for NA*ME tag/February.
     
  3. A simple and healthy soup; I too cut back on the lentils as I wanted a more soupy soup. The onions do add an extra nice touch
