- 3 ounces zucchini
- 3 ounces yellow squash (coin cut)
- 2 ounces red peppers (1-inch x2-inch)
- 2 ounces shiitake mushrooms
- 2 ounces broccoli florets
- 1 tablespoon olive oil
- 1 teaspoon chopped garlic
- 2 ounces bulgur wheat
- 2 ounces buckwheat groats
- 4 ounces white rice
- 1 tablespoon herb oil

Roasted Vegetable Sauce
- 98 ounces diced tomatoes
- 2 ounces chopped garlic
- 4 ounces basil pesto
- 5 1⁄2 ounces roasted peppers (to taste)
- 1 tablespoon black pepper
- 1 tablespoon salt
directions
- Cook all rice, bulgar, and buckwheat as directed on box, then combine. Set aside and keep hot. Saute all vegetables in oil and garlic until tender. Season vegetables with salt and pepper. To serve, pour 4 ounces of sauce evenly over plate, then mound rice mixture in middle. Top with vegetables.
- Sauce.
- NOTE: Yield 1 gallon.
- Combine ingredients, roast in oven for 20 minutes. Puree with blender.
