  • Combine all ingredients except stewed tomatoes, salt and pepper in slow cooker; cover and cook on high 4-6 hours.
  • Add tomatoes during last 45 minutes.
  • Discard ham hock; season to taste with salt and pepper.

  1. I do not like lentils very much, but I know they're healthy. So I decided to try - yet again - a recipe using them. This was awesome! I had to make some changes because I didn't have everything on hand. I substituted the stewed tomatoes for a small can of V8 and a plum tomato. I had some cut-up leeks (2) on hand and so I used them instead of onion. For the broth, I had cooked a whole ham the day before, and used the juices + water and simmered with the hambone overnight. This is a very forgiving recipe. For the next time, my husband said he wants more ham, lentils and veggies in it, but the taste was still "spot-on". I think it was perfect as it was!
     
  2. A+ for easy! Followed the recipe exactly as written except for veg stock instead of chicken, just what I had on hand. Family says they love it and it really was no fuss no muss, went together in about 15 minutes tops. Thanks di...I think they'll be asking for this one again.
