Lemonade Salmon

    lbs salmon fillets, skinned preferred
  • 12
    sweet vidalia onion, sliced
  • 12
    cup butter
  • 1
    (8 ounce) can frozen concentrated lemonade or (12 ounce) can frozen concentrated lemonade

DIRECTIONS

  • Tear off a sheet of aluminum foil large enough for the fish, butter the area where the fish will lay.
  • Place fish on the butter and place slices of sweet onion on top of the fish.
  • Place 4 or 5 pats of butter across the fish.
  • Pull foil up along the sides to create a boat like cradle and pour thawed lemonade onto fish, about half the can.
  • Roll the foil up to seal the juice inside and cook at 425 degrees for 30 minutes.
  • Iit is important to try and keep the juices inside the foil until the fish is cooked.
  • Remove from grille with spatulas or in the oven use a 13" x 9" cake pan to catch any drippings.
