These are delightful, unsual cookies. Who would have thought to combine the flavors of lemon, almonds, and chocolate together in one cookie? These taste like tender, buttery shortbread on the outside, with the hidden surprise of the chocolate candy in the center. Definitely let the cookies sit on the cookie sheets a while before attempting to remove - if you remove them too soon, they crumble.

This is the exact same recipe that I have in my Pillsbury Best Cookies Cookbool.......I only made a few with hershey's kisses and the rest with cooked pineapple jam instead...my family really preferred this version with the chocolate in it........They came out looking quite weird, like in the picture..and not round like what it looked like in the book. They also crumble rather easily, and the ones at the bottom of the cookie jar were squashed. I dont think Ill try this again, but thanks anyway.
