• Yields: 1 cup

ingredients

• 2 large eggs
• 3⁄4 cup granulated sugar
• 2 tablespoons butter
• 1⁄2 cup lemon juice
• 1 tablespoon lemon zest

directions

1. In top of double boiler, beat eggs and sugar, stir in butter, lemon juice and lemon zest --
2. Cook over simmering water for 10-12 minutes or until mixture reaches 160*.
3. and is thick enough to coat the back of the spoon.
4. Refrigerate for up to one week.
