Crust
- butter-flavored cooking spray
- 1⁄4 cup margarine
- 1 cup powdered sugar
- 1 cup flour
- 1⁄8 teaspoon salt
- 1 teaspoon vanilla extract

Topping
- 1⁄2 cup egg white
- 1 cup sugar
- 2 tablespoons flour
- 1⁄4 teaspoon baking powder
- 1⁄8 teaspoon salt
- 1 teaspoon finely fresh grated fresh lemon rind
- 3 tablespoons fresh lemon juice
- powdered sugar, to dust top
directions
- Preheat oven to 325°F.
- Spray and 8-inch square pan with cooking spray and wipe with a paper towel.
- In a medium sized bowl, combine crust ingredients and mix well.
- Spread crust dough over bottom of the pan.
- In a small bowl, combine topping ingredients and mix well.
- Pour the topping over the crust.
- Bake for 27-30 minutes.
- Cool completely before cutting bars and serving.
- Dust bars with powdered sugar when cool.

Very tasty lemon bars! Tip for mixing the crust: you've really got to get your hands in there and knead it like biscuit dough to get the ingredients properly blended. The topping makes a very nice custard that has plenty of lemon flavor. I didn't top mine with powdered sugar because I didn't want it too sweet. Thanks for posting this recipe!
