Leftover Magic Beef

"I came across this recipe in the Woman's Day Magazine."

• Serves: 4

ingredients

• 2 teaspoons oil
• 2 cups broccoli florets
• 1 cup mushroom, sliced
• 1 cup carrot, shredded
• 3 cups water
• 2 (3 ounce) packages ramen noodles
• 2 cups beef, strips
• 1⁄4 cup stir-fry sauce

directions

1. Heat oil in large skillet over high heat.
2. Add broccoli florets, mushrooms and carrots, saute 2 minutes.
3. Add water, bring to a boil. Crumble in noodles (not seasoning packets).
4. Simmer, covered, 3 minutes or until noodles are almost soft.
5. Stir in beef strips and stir-fry sauce. Simmer uncovered 1 minute more or until noodles are soft.

I had 2 pkgs of ramen noodles with no powder packets because I had used them for another recipe. Also had leftover roast beef. This recipe is so easy, quick and fantastic for a fairly quick weeknight meal. I added a sprinkle of black pepper. This has just the right amount of stir fry sauce of lots of flavour. Dh and ds loved it!
