Lavender Tea Cookies

- 1 cup unsalted butter, very soft
- 2⁄3 cup superfine sugar (minus 1 tablespoon!)
- 1 egg, beaten
- 1 1⁄4 cups all-purpose flour (minus 1 tablespoon)
- 1 tablespoon dried lavender flowers, slightly ground with a mortar and pestle
directions
- Preheat oven to 350 degrees.
- Cream butter and sugar together by hand.
- Add egg and beat until well combined.
- Stir in the flour and lavender flowers until well combined.
- On a parchment lined cookie sheet, drop dough by tablespoon, spacing at least 3 inches apart, allowing for the cookie to spread out.
- Bake for 12-15 minutes or until pale golden brown and the edges tinge brown.
- *They will be very soft until cooled on a wire rack. Store in an air-tight container; they are better the 2nd day, if they last that long.

I had lavender tea cookies at a wedding reception a few weeks ago, so I was thrilled when I found this recipe. Not at all what I was expecting because theytaste was pretty bland in comparison to the cookies that I had at the wedding reception. Just what the recipe describes "just a plain buttery lavender cookie."

Yummy cookie! Unlike the other reviewer, I had no preconceived idea of how this cookie should turn out. I got interested in baking with lavender after reading an Herb magazine at my doctor's. Yes, these are a simple butter cookie but that's what the description says it is. Really good with a hot cup of tea at night or a quick pick-me-up in between meals. I sure plan on making these again.
