Latin Fiesta Shrimp and Garlic

"This is my best attempt at the garlic shrimp from our family's favorite little Mexican restaurant Mi Tierra in Hadley, MA. My daughter says this is her favorite meal I have ever made! She's 4 and sushi is her fav food so I respect her judgement :-)"

  • Chop carrot, pepper, squash, garlic.
  • Sauté garlic in Sazon GOYA, olive oil and salt on low heat until garlic is soft and starting to toast.
  • Add vegetables and cook till the colors of the vegetables pop.
  • Add shrimp cook another 5 minutes or until the shrimp turns pink.
  • Serve over pasta or rice.

I live in the green, green hills of western Massachusetts with my sweet girl and nutty husband and that makes me smile alot. I am a teacher by day (very young children 0-3) and run a tattoo shop (with my husband) by every other minute which allows for a life full of laughter art adventure but not much sleep! As a family we work hard to have a sit down all together talk about your day dinner every night and I truly believe its what keeps us sane. Good food, good company, good times!
