Kim's Satay Sauce

"Here is a simple recipe that goes wonderfully with chicken as a light drizzle or a dipping sauce."

ingredients

• 1 1⁄4 cups coconut milk
• 3⁄4 cup smooth peanut butter
• 3 tablespoons fish sauce
• 1 tablespoon soy sauce
• 2 1⁄2 tablespoons minced ginger
• 3 tablespoons brown sugar
• 1 teaspoon crushed red pepper flakes

directions

1. Combine all ingredients in a food processor until smooth. Refrigerate and can be kept up to one week.
