KFC Brine Base Dry Mix

"Use with 2.5 quart batch of brine or 1/3 cup for each quart. See other recipes for use. Store in ziploc and follow directions in other recipes for use."

ingredients

• 1⁄3 cup kosher salt
• 1 teaspoon whole black peppercorn
• 1 whole allspice
• 1⁄2 tablespoon nitrate (salt peter)
• 1 teaspoon ginger
• 1⁄4 cup sugar
• 1 tablespoon baking powder
• 2 teaspoons Accent seasoning

1. Mix all ingredients together.
2. Store in ziploc.
