Keto Granola

"Original recipe was from Delish.com. I find it irritating that Keto people seem to take absolutely no notice of fiber content in their recipes, even though an obvious side effect is constipation, which I suffer from on a completely "normal" diet, anything less than 20 grams of fiber, or that doesn't include 1/2 c of black beans DAILY. Must be nice not to have to worry about it?!? Anyhow, I'm adjusting the recipe and putting it here so I can monitor my fiber grams, that's all. Sheesh."

  • Preheat oven to 350° and grease a baking sheet with cooking spray. In a large bowl, mix together almonds, pecans, coconut flakes, pumpkin seeds, flax meal, and chia seeds. Stir in cloves, cinnamon, vanilla, and salt.
  • Beat egg white until foamy. Add the granola and coconut oil into the blender (switch to a regular beater if you were using the whisk attachment). Stir until everything is well coated. Pour onto prepared baking sheet and spread into an even layer. Bake for 20 to 25 minutes, or until golden, gently stirring halfway through. Let cool completely.
