Keto Cocoa Peppermint Fat Bombs

"These little truffle-like balls may be small, but they have a great flavor punch. Being on the Keto diet is pretty easy, but I find I don't fulfill my daily fat quota. I just pop one of these as a snack and it also satisfies my sweet tooth. Even my family loves them."

  • 1 (8 ounce) package cream cheese (room temperature)
  • 14 cup butter (room temperature)
  • 2 -4 tablespoons artificial sweetener (I use Xylitol)
  • 13 cup hershey's special dark cocoa (plus extra for dusting)
  • 12 teaspoon peppermint extract

  • Place softened cream cheese and butter in bowl. Beat with a mixer until soft and fluffy.
  • Add sweetener. Start with 2 tablespoons and add more if you want it sweeter.
  • Add cocoa and peppermint extract. mix until smooth and creamy.
  • Chill for about an hour in the fridge.
  • Form into balls and roll in cocoa powder.
  • Store in refrigerator or or freezer.
